Abstract[English]
Provided is a computer implemented method and systems for assessing the risk of phage infection in a fermented dairy product manufacturing process. The method comprises steps of receiving a plurality of predetermined fermented dairy product manufacturing conditions and inputting the plurality of predetermined fermented dairy product manufacturing conditions into a model to generate a coagulation state. Furthermore, the method comprises outputting the phage score generated by the model, and optionally determining means and/or actions to minimize the risk pf phage infections.[French]
L'invention concerne un procédé et des systèmes mis en œuvre par ordinateur pour évaluer le risque d'infection par phages dans un processus de fabrication de produit laitier fermenté. Le procédé comprend les étapes consistant à recevoir une pluralité de conditions de fabrication de produit laitier fermenté prédéterminées et fournir la pluralité de conditions de fabrication de produit laitier fermenté prédéterminées en entrée d'un modèle pour générer un état de coagulation. En outre, le procédé consiste à délivrer le score de phage généré par le modèle, et éventuellement à déterminer des moyens et/ou des actions pour réduire au minimum le risque d'infections par phages.
