The present invention relates to encapsulation of microbial cultures to improve the robustness and stability upon storage. In particular, the present invention relates to dry preparations of microbial cultures, such as lactic acid bacteria (LAB), coated by a fat-matrix that increase survivability and mitigate post- acidification upon storage at ambient temperature for extended periods of time.[French]
La présente invention concerne l'encapsulation de cultures microbiennes pour améliorer la robustesse et la stabilité lors du stockage. En particulier, la présente invention concerne des préparations sèches de cultures microbiennes, telles que des bactéries lactiques (LAB), enrobées par une matrice de matière grasse qui augmentent la capacité de survie et qui atténuent la post-acidification lors du stockage à température ambiante pendant des périodes prolongées.
