Abstract[English] The disclosure provides systems and methods for high total TS spray drying. The systems and methods include (1) a high concentration evaporation step in addition to the convention evaporation; (2) additional cavitation after high concentration; and (3) heating of the product prior to the spray drying. The heating of the product prior to spray drying can be achieved using cavitation after high concentration or via use of a heater providing fast heating, low residence time with no heating surfaces, such as e.g., an ohmic heater.[French] La divulgation concerne des systèmes et des procédés pour un séchage par pulvérisation TS totale élevée.
