Abstract[English] The new disclosure signifies manufacture of cinnamon extract using aqueous glycerin solvent, referred to as aqueous Glycerin, Glycerol, Propanetriol,1,2,3-Trihydroxypropane or 1,2,3-Propanetriol as the base solvent through a cold brew extraction method. The process involves extraction of all active and inert cinnamon bark composites such as cinnamaldyhyde, eugenol, typical protein, pectin and minerals to the final extract. The extraction process is conducted at ambient or lower temperature levels so as not to harm heat sensitive natural cinnamon properties. The extraction process does not include alcohol, sugar or any chemical.[French] La présente invention concerne la fabrication d'un extrait de cannelle à l'aide d'un solvant de glycérine aqueux, appelé glycérine aqueuse, de glycérol, de propanetriol, de 1,2,3-trihydroxypropane ou de 1,2,3-propanetriol en tant que solvant de base par l'intermédiaire d'un procédé d'extraction par infusion à froid. Le procédé comprend l'extraction de tous les composites d'écorce de cannelle actifs et inertes tels que le cinnamaldéhyde, l'eugénol, la protéine typique, la pectine et les minéraux pour obtenir l'extrait final. Le procédé d'extraction est réalisé à des niveaux de température ambiante ou inférieure pour ne pas nuire aux propriétés sensibles à la chaleur de la cannelle naturelle.
