Abstract[English]
Streptococcus thermophilus is highly adapted to grow on lactose and its main role in dairy fermentation is the rapid conversion of lactose into lactate. Glucose is known as a poor substrate for growth and only some strains of S. thermophilus are known to ferment galactose. The present invention aims to provide S. thermophilus strains that are better adapted to grow and acidify in low-lactose solutions such as lactose-hydrolyzed milk.[French]
Streptococcus thermophilus est très adapté à croître sur le lactose et son rôle principal dans la fermentation laitière est la conversion rapide du lactose en lactate. Le glucose est connu comme étant un mauvais substrat pour la croissance et seules certaines souches de S. thermophilus sont connues pour fermenter le galactose. La présente invention vise à fournir des souches de S. thermophilus qui sont mieux adaptées à la croissance et à l'acidification dans des solutions à faible teneur en lactose telles que le lait hydrolysé par du lactose.
