Abstract[English]
The present invention relates to a film comprising greater than or equal to 50 wt% of a combination of a plant protein and polysaccharide based upon the total weight of the film at 55% relative humidity and 22 °CC, wherein the weight ratio of polysaccharideto plant protein is in the range 0.1:1 to 2:1, and wherein the plant protein has been pre-treated with an organic acid.[French]
La présente invention concerne un film comprenant plus de 50 % en poids ou plus d'une combinaison d'une protéine végétale et d'un polysaccharide, sur la base du poids total du film à une humidité relative de 55 % et à une température de 22° C, le rapport pondéral entre le polysaccharide et la protéine végétale étant compris entre 0,1 : 1 et 2 : 1, et la protéine végétale ayant été prétraitée avec un acide organique.
