Abstract[English]
The present invention relates to a Yarrowia strain, preferably a non-genetically modified Yarrowia strain, for the production of a wild-type, non-engineered, microbial lipolytic enzyme with a high specificity for short-chain fatty acids, preferably with a higher specificity for short chain fatty acids than for medium to long chain fatty acids, preferably when compared to a known microbial lipolytic enzyme. This invention is suitable for use in the food industry, preferably in the dairy industry, more preferably in the cheese industry leading, for example, to flavor enhancement or shortening of the ripening times for ripened cheeses.[French]
La présente invention concerne une souche de Yarrowia, de préférence une souche de Yarrowia non génétiquement modifiée, destinée à la production d'une enzyme lipolytique microbienne, non modifiée, de type sauvage présentant une spécificité élevée vis-à-vis des acides gras à chaîne courte, de préférence avec une spécificité plus élevée vis-à-vis des acides gras à chaîne courte que des acides gras à chaîne moyenne à longue, de préférence par comparaison avec une enzyme lipolytique microbienne connue. Cette invention est appropriée pour être utilisée dans l'industrie alimentaire, de préférence dans l'industrie laitière, plus préférentiellement dans l'industrie fromagère conduisant, par exemple, à une amélioration de l'arôme ou à un raccourcissement des temps d'affinage de fromages affinés.
