A method and composition for accelerating alcohol metabolism and/or preventing or alleviating a hangover, and a related use thereof in the preparation of foods, beverages, nutritional supplements, and animal feeds for accelerating alcohol metabolism. The composition comprises an effective amount of ergothioneine or a pharmaceutically acceptable salt, acid, ester, analogue or derivative thereof, and can also optionally comprise an effective amount of paraxanthine or 1-methylxanthine.[French]
