Abstract[English] The method of detecting contaminants in a food processing stream whereby materials used in the processing stream are labelled with a fluorescent dye. The accidental presence of such material in the food can be detected by exciting the food with a light source adapted to the excitation peak of the fluorescent dye of the contaminating material and detecting the emission of the fluorescent dye.[French] L'invention concerne le procédé de détection de contaminants dans un flux de traitement d'aliments selon lequel des matières utilisées dans le flux de traitement sont marquées avec un colorant fluorescent. La présence accidentelle d'une telle matière dans l'aliment peut être détectée par excitation de l'aliment avec une source de lumière adaptée au pic d'excitation du colorant fluorescent de la matière contaminante et détection de l'émission du colorant fluorescent.
