Abstract[English]
The invention relates to a method for producing esters by reaction between a first reagent chosen from an alcohol or a carboxylic acid, contained in an aqueous solution, and at least one second reagent chosen from a carboxylic acid or an alcohol, in the presence of an enzymatic catalyst. The invention is characterised in that the reaction mixture is in the form of a Pickering emulsion comprising at least one water phase and one oil phase, said oil phase comprising at least one extraction solvent.[French]
Procédé de fabrication d'esters par réaction entre un premier réactif choisi parmi un alcool ou un acide carboxylique contenu dans une solution aqueuse et au moins un second réactif choisi parmi un acide carboxylique ou un alcool en présence d'un catalyseur enzymatique, caractérisé en ce que le mélange réactionnel se présente sous la forme d'une émulsion de Pickering comprenant au moins une phase eau et une phase huile, ladite phase huile comprenant au moins un solvant d'extraction.
