The present invention introduces innovative Multifunctional Food Ingredients (MFIs) designed to replace sodium nitrite in processed meats, fish and dairy. These MFIs are formulated from plant-based extracts of polyphenols, known for their antioxidant, and antipathogenic properties, efficacy in food preservation, colour stabilisation, and a broad spectrum of health advantages, further enhanced by dietary fibre. This invention directly addresses public health concerns linked to the consumption of nitrite food additives and their associated risks of colon cancer and cardiovascular diseases. Furthermore, the synergistic combination of polyphenols and dietary fibres provides enhanced benefits for gut health, marking a significant advancement in the formulation of food additives. Additionally, this invention aligns with the global shift towards sustainable, eco-friendly bioproducts, contributing to the reduction of agri-food waste.[French]
La présente invention introduit des ingrédients alimentaires multifonctionnels innovants (MFI) conçus pour remplacer le nitrite de sodium dans des viandes, des poissons et des produits laitiers traités.
