Abstract[English] A method of producing a plant-based beverage is disclosed. The method may comprise circulating a mixture including soaked groats, water, an enzyme to break down starch particles, in a container to undergo a hydrodynamic cavitation, to produce the mixture after the circulation as a plant-based uncentrifuged concentrate having a D90 particle size being less than about 600 microns. It has been determined that under certain embodiments, utilizing an associated holding temperature of about 50 °C to about 80 °C, and an associated holding time of from about 5 minutes to about 40 minutes can result in improved product outcomes.[French] Un procédé de production d'une boisson à base de plantes est divulgué. Le procédé peut consister à faire circuler un mélange contenant des gruau trempé, de l'eau, une enzyme pour décomposer des particules d'amidon, dans un contenant pour qu’il subisse une cavitation hydrodynamique, pour produire le mélange après la circulation en tant que concentré non centrifugé à base de plantes ayant une taille de particule D90 inférieure à environ 600 microns. Il a été déterminé que, dans certains modes de réalisation, l’utilisation d'une température de maintien correspondante d'environ 50°C à environ 80°C, et d’un temps de maintien correspondant d'environ 5 minutes à environ 40 minutes peut conduire à des résultats de produit améliorés.
