Provided herein are artificial casein micelles (ACMs), wherein the artificial casein micelles comprise one or more caseins, and a polyphosphate, optionally wherein the artificial casein micelles further comprise a divalent cation species; as well as processes for preparing such artificial casein micelles; with applicability to the manufacture of substitute dairy products, including from recombinantly produced caseins.[French]
