Abstract[English] The present application relates to emulsions of ascorbic acid salts. In some embodiments, a composition includes water and oil. The composition includes two or more ascorbic acid derivatives in a total amount of about 9 wt% to about 15 wt%. The ascorbic acid derivatives are selected from the group consisting of sodium ascorbyl phosphate (SAP), magnesium ascorbyl phosphate (MAP), and ascorbyl glucoside (AA2G). The composition includes an emulsifier and a functional polymer.[French] La présente invention concerne des émulsions de sels d'acide ascorbique. Dans certains modes de réalisation, une composition comprend de l'eau et de l'huile.
