Abstract[English]
The invention entitled "Malt supplement Containing Oleocanthal, with Anti- inflammatory, Antioxidant and Anti-cancer Properties" is in the field of extracting and formulating a compound used in food, pharmaceutical, and supplement industries with special applications in biomedicine. Oleocanthal is a polyphenol with significant medicinal and nutritional value, however, no method has been proposed yet for its economic extraction while preserving properties. Moreover, this substance is lost in the debittering process and becomes useless. In this invention, an innovative supercritical process with triple solvents is used to extract quality oleocanthal from the olive fruits at a high rate and the temperature and pressure of 59 °C and 2 MPa, respectively. Interestingly, in this process, the materials used can be collected and used again. The addition of oleocanthal in the boiling stage of the malt extraction process leads to the production of a cost-effective and quality malt drink supplement with antioxidant and anti-cancer properties.[French]
L'invention intitulée "Supplément de malt contenant de l'oléocanthal, présentant des propriétés anti-inflammatoires, antioxydantes et anti-cancéreuses" concerne le domaine de l'extraction et de la formulation d'un composé utilisé dans les industries alimentaires, pharmaceutiques, et des compléments avec des applications spéciales en biomédecine. L'oléocanthal est un polyphénol présentant une valeur médicinale et nutritionnelle significative, cependant aucun procédé n'a encore été proposé pour son extraction économique tout en conservant ses propriétés. De plus, cette substance est perdue dans le processus de désamérisation et devient inutile. Dans la présente invention, un processus supercritique innovant avec des solvants triples est utilisé pour extraire de l'oléocanthal de qualité à partir des fruits d'olive à un taux élevé et à la température et à la pression de 59 °C et 2 MPa, respectivement. De manière intéressante, dans ce processus, les matériaux utilisés peuvent être collectés et utilisés à nouveau. L'addition d'oléocanthal dans l'étape d'ébullition du processus d'extraction de malt conduit à la production d'un supplément de boisson maltée rentable et de qualité présentant des propriétés antioxydantes et anti-cancéreuses.
