Abstract[English] The present invention relates to a fermented lyophilised antioxidant extract and a packaging material comprising polycaprolactone (PCL) reinforced with the aforementioned fermented and encapsulated antioxidant extract derived from pineapple by-products. According to the invention, the extract is present in at least 10% of the total weight, forming a material with an antioxidant capacity of at least 115 mg Trolox/100 g material. The present invention further relates to a method of manufacturing the extract and the packaging material including, among other steps, ultrasound-assisted extraction, fermenting the lyophilised pineapple extract, encapsulating it and extruding the capsules containing the lyophilised pineapple extract therein with PCL. Advantageously, the material obtained is used for packaging fatty foods in order to increase their shelf life.[Spanish] La presente invención preconiza un extracto antioxidante liofilizado fermentado y un material de envasado basado en policaprolactona (PCL) reforzado con el citado extracto antioxidante fermentado y encapsulado procedente de subproductos de piña, donde el extracto está presente en, al menos, un 10% de su peso total, constituyendo un material con una capacidad antioxidante de, al menos, 115 mg Trolox/100g material. Igualmente, es objeto de la presente invención, el procedimiento de fabricación del extracto y material de envasado que incluye, entre otras etapas, la extracción asistida por ultrasonidos, una fermentación del extracto de piña liofilizado, su encapsulación y la extrusión de las capsulas que contienen el extracto de piña liofilizado en su interior con PCL. Ventajosamente, el material obtenido es usado en el envasado de alimentos grasos con el fin de aumentar su vida útil.[French] La présente invention concerne un extrait antioxydant lyophilisé fermenté et un matériau d'emballage à base de polycaprolactone (PCL) renforcé avec ledit extrait antioxydant fermenté et à enrobage issu de sous-produits d'ananas, l'extrait constituant, au moins, 10% de son poids total, pour former un matériau doté d'une capacité antioxydante d'au moins 115 mg de Troxol/100 g de matériau. L'invention concerne également le procédé de fabrication de l'extrait et du matériau d'emballage qui comprend, entre autres étapes, l'extraction assistée par ultrasons, une fermentation de l'extrait d'ananas lyophilisé, son enrobage et l'extrusion des capsules qui renferment l'extrait d'ananas lyophilisé avec de la PCL. De manière avantageuse, le matériau obtenu est utilisé dans l'emballage d'aliments gras avec pour but d'augmenter leur durée de conservation.
