Abstract[English] The present invention relates to microencapsulated microbial cultures with high storage stability and method of preparation thereof. It particularly relates to probiotic microencapsulation using protein-oligosaccharide conjugate and chitosan to form a complex insoluble coacervates polymer for enhancing storage stability of microbial cultures during freeze drying and storage.[French] La présente invention concerne des cultures microbiennes microencapsulées ayant une stabilité au stockage élevée et un procédé de préparation associé. L'invention concerne en particulier une microencapsulation probiotique faisant appel à un conjugué protéine-oligosaccharide et à du chitosane pour former un polymère de coacervats insolubles complexes pour améliorer la stabilité au stockage de cultures microbiennes pendant la lyophilisation et le stockage.
