Die vorliegende Erfindung betrifft den Bereich Lebensmittel. Hierin wird ein Verfahren zur Herstellung von Bindemitteln für nicht-tierische Lebensmittel offenbart, welches das Mischen von verarbeiteten und unverarbeiteten Leguminosae-Mehlen mit hohem Stärkegehalt bis zur Homogenität umfasst und die Wirkung herkömmlicher Lebensmittelbindemittel nachahmt. Der Lebensmittelbinder kann zum Panieren von Lebensmitteln, als Bindemittel in neuen veganen Matrizen und als Bindemittel in Back- und Süßwarenprodukten verwendet werden. Das Lebensmittelbindemittel ist auch für kalte Anwendungen sehr gut geeignet.[English]
The present invention lies in the field of foodstuffs. It discloses a method for producing binders for non-animal foodstuffs, which comprises the mixing of processed and unprocessed leguminosae flours with a high starch content until they are uniform, and imitates the effect of conventional food binders. The food binder can be used to bread foodstuffs, as a binder in new vegan matrices, and as a binder in baked and confectionery products. The food binder is also highly suitable for cold applications.[French]
L'invention concerne le domaine des produits alimentaires. L'invention concerne un procédé de production de liants pour aliments non animaux, qui comprend le mélange de farines de légumineuses transformées et non transformées à haute teneur en amidon jusqu'à homogénéité et qui imite l'action des liants alimentaires traditionnels.
