Abstract[English]
A mineral supplement or fortified food ingredient product comprising nutritional minerals and unheated protein-carbohydrate carriers or Maillard Reaction Products (MRP) produced by heating aqueous protein-carbohydrate mixtures. The components in the formulation comprise protein, carbohydrates, mineral(s) iron salts/chelates and pH modifying agents. The product may also be a mixture of complexed iron compounds that is stable to heating. The protein complexed with iron may exist as soluble colloidal dispersion of iron-protein entities. A dried formulation of the nutritional mineral supplement may be obtained by dehydration of the aqueous mixture. The wet or dried product may be used in supplements or added to foods to obtain mineral-fortified foods.[French]
L'invention concerne un complément alimentaire minéral ou un produit d'ingrédient alimentaire enrichi comprenant des minéraux nutritionnels et des supports protéine-glucide non chauffés ou des produits de réaction de Maillard (MRP) produits par chauffage de mélanges protéine-glucide aqueux. Les composants dans la formulation comprennent des protéines, des glucides, des sels/chélates de fer d'un ou de plusieurs minéraux et des agents de modification du pH. Le produit peut également être un mélange de composés de fer complexés qui est stable au chauffage. La protéine complexée au fer peut exister sous la forme d'une dispersion colloïdale soluble d'entités fer-protéine. Une formulation séchée du complément minéral nutritionnel peut être obtenue par déshydratation du mélange aqueux.
